And for la Pièce de résistance and my biggest passion of all, DESSERT. Cakes, Cookies, Cinnamon Rolls, Tarts, Ice cream and the list goes on...
Carrot &
Apple
cake

What you need:
2 cups shredded carrot (approx. 2 large carrots)
2 cups shredded apples (approx. 5 medium apples)
330g sugar
320ml oil (I used sunflower)
600g flour
The juice and zest from an orange
200g dried fruit (I used sultanas, raisins and cranberries)
200g nuts (I used pecan nuts)
1 tbsp baking powder
1 tsp cinnamon powder
More pecan nuts for topping up the cake
How to prepare it
In a large bowl, mix together the oil and sugar, then add the apples, carrots and dried fruit, mixing further.
Add the orange juice and zest, cinnamon and pecan nuts and stir the ingredients together.
Start incorporating the flour a few spoons at the time while stirring slowly with a spatula until you get a thick wet dough.
Line a tray with baking parchment and spread the mixture evenly with a spatula, decorate with more pecan nuts and put it into a preheated oven at 180°.
Bake for 35-40 minutes and after removing, let it cool for 30 minutes. Can be stored in the fridge for up to 5 days.
Best served warm, with a cozy cup of tea, milk or coffee!
