GF High Protein Lentil base Pizzas

What you need for 2 pizzas
For the base:
1 + 1/2 cups dry, unsoaked red lentils
1 + 1/2 cups water
3 tsp garlic powder
1 tsp salt
1 tsp dried basil
1 tsp dried oregano
For the vegan cheese:
3 tbsp vegan butter
2 + 1/2 tbsp flour
2 cups unsweetened soy milk
1 tbsp nutritional yeast
1 tsp apple cider vinegar
1/2 tsp salt
1/4 tsp turmeric
Pinch of black pepper
For the tomato sauce:
1 can of tomato sauce
2 cloves garlic
1 tsp dried basil/ fresh basil
1/2 tsp sugar
1/2 tsp salt
How to prepare it
The base:
Add all the ingredients into a blender and process until completely pureed. Pour the mixture evenly on your pizza trays covered with parchment paper. Make sure the mixture is spread evenly and not too thin - a thickness of minimum 1/2cm.
Bake at 180° for 12 minutes, then place another piece of parchment paper on a plate and flip the base on its other side - bake for another 5-7 minutes or until golden.
Add the toppings as you wish and bake further.
The vegan cheese:
Melt the vegan butter on medium heat in a sauce pan then gradually start adding the flour and whisk until thickened.
Slowly add the warm milk in and keep whisking until thickened.
Add the rest of the ingredients saving the vinegar for last. Let cool before adding on pizza.
The tomato sauce:
Sautee grated garlic in 1 tsp olive oil, add the rest of the ingredients in and bring to a simmer for 10 minutes on medium heat.

For the toppings
Zucchini pepperoni pizza:
1 zucchini
Smoked paprika
Salt
Olive oil
Slice zucchini in thin slices, add the rest of the ingredients to the slices and mix together.
Spread tomato sauce evenly on the lentil base, add a layer of the vegan cheese and spread zucchini slices evenly - bake for 12 minutes.
Mushroom pizza:
Mushrooms
Rucola
Lemon
Spread tomato sauce evenly on the lentil base, add a few spoons of the vegan cheese and top up with sliced mushrooms - bake for 12 minutes. Once baked, add fresh rucola and a small squeeze of lemon.
