Burgers, Pizzas, Pastas, Noodles and Veggies galore

High protein green tofu curry

What you need:

2 zucchinis

1 head of broccoli

400g spinach

1 green pepper & 1 yellow pepper

1 small onion

3 cloves garlic


400g tofu

3 tbsp nutritional yeast


2 cans light coconut milk

Juice from 1/2 lemon


3 tsp green curry powder

Salt, pepper & dried herbs

Olive oil



 

How to prepare:


Cut the tofu into small cubes then add to a bowl with salt, pepper, dried herbs and olive oil. Add to the air fryer for 10-12 min or until golden & crispy. Set aside.

Slice the zucchini then cut slices into halves. Cut the broccoli into small florets and peppers into large pieces.

Chop the onion and garlic thinly then add to a large pot with 2 tbsp of olive oil, fry until golden. Add the rest of the vegetables. salt and pepper then stir and let it cook on medium heat for 8-10 minutes.


Add 200g of spinach with the nutritional yeast, coconut milk, lemon juice, curry powder and salt & pepper to a blender and process until smooth. Pour the mixture into the pot on top of the vegetables. Keep the heat medium, cover with a lid and let cook for 10-15 minutes.

Remove the lid, add the air fried tofu and the rest of the spinach the cook for another 3-5 minutes on low heat.


Garnish with pumpkin seeds and serve with bread. Enjoy!
